Wade’s festive mixed nut roast recipe

At Wade, we’re always looking for innovative ways to use our products. And, with Christmas just around the corner, we’ve sought out the best recipe to make use of our Milton Brook range of mortar and pestles. This luxurious nut roast is a great option for an indulgent Christmas dinner. Not only that but it offers a great vegetarian option that cooks far more quickly than the traditional turkey…

10g butter
2 crushed garlic cloves
1 large chopped onion
50g toasted pine nuts
75g toasted hazelnuts
50g ground walnuts
50g ground cashew nuts
100g wholemeal breadcrumbs
1 lightly beaten egg
2tbsp chopped fresh thyme
275ml fresh vegetable stock
salt and pepper
fresh thyme sprigs (to garnish)

Preheat the oven to 180c. Grease a loaf tin, remembering to line it with greaseproof paper

Melt the butter in a small saucepan over a medium heat. Add the garlic and onion. Make sure you keep stirring. After about 3 minutes, the garlic and onion should be lightly golden. Remove the pan from the heat.

Grind the pine nuts and hazelnuts in a mortar and pestle. Stir the freshly ground nuts into the pan with the cashew nuts and walnuts. Add the breadcrumbs, thyme, egg, stock and seasoning.

Spoon the mixture into the prepared tin and level the surface. Cook in the centre of the preheated oven for about 30 minutes. To check if it’s cooked, insert a skewer into the centre of the loaf. If it comes out clean, your nut roast is ready…
